Cooking is one of my favorite activities for living a good life. First, good food gives us energy, nourishes our bodies, and makes us feel better. Second, my favorite recipes are ones packed with lots of vegetables and cooked in one pot. For my recipe roundup, I will feature my top recipes, my prep list, and my shopping list so you can easily recreate these meals in your meal plan.
I love to cook soups, especially during fall and winter, and I also enjoy eating soup for breakfast! Once it is cooked all you have to do is heat it in the morning and it’s warm and filling.
Here are the top 4 recipes I made in November
1) Tomato-Spinach Tortellini Soup (makes 8 servings)

Tomato-Spinach Tortellini is one of my favorite soups to make in the instant pot. It’s easy to cook and it tastes amazing on a cold day. Next, I like to put the carrots, celery, and onions in a food processor for faster prep, and then I’ll use the leftovers for my salads or other recipes.
2) Garlicky Shrimp with Smashed Chickpea “Mofongo” (Makes 4 servings)

I cooked Garlicky Shrimp for the first time and I loved that the shrimp and chickpeas are the stars of the dish. Garlicky Shrimp is Gina’s take on a classic Puerto Rican dish that uses chickpeas instead of plantains and pork rinds, and it’s packed with lots of veggies and garlic. The shrimp cooks in minutes right in the sauce. Also, I enjoyed drinking the wine after using some of it in this recipe.
3) Taco Soup Recipe with Cornbread (Makes 12 cups of soup)

I recently found The Cozy Cook on Instagram while I was on a quest to find good cold-weather recipes. I love how her recipes are easy and delicious and this one gave me a chance to use my Dutch oven.
Stephanie’s taco soup hit the spot! And it’s packed with beans and tomatoes. I added corn to it and sliced avocado on top, and I made some cornbread to go with it (Yup, that’s butter in the picture). Lastly, Her taco soup has a 5-star rating on her blog, so I must not be the only one who thinks it’s delicious!
4) Chicken and Gravy (Makes 4 servings)

Chicken and gravy is simple to make and the gravy tastes amazing. I’ve never made my own gravy from scratch before and I impressed myself with her recipe. Since I was in a hurry, I used canned green beans and instant mashed potatoes for the sides. You can adjust the serving size on the recipe to make the quantity larger or smaller.

I like to prep before I cook because it saves me time. After I make my shopping list, I also make a prep list so I can have all my ingredients ready to go before I start cooking. Without a doubt I use this cookbook the most.
